It is sometimes referred to as the “Indian burger” because it consists of a spicy potato fritter (vada) sandwiched between a small bun (pav), similar to a hamburger.

 

Recipe Of Vada Pav  

Ingredients Of Vada Pav :

For the Potato Vada :

  • 4-5 medium-sized potatoes, boiled, peeled, and mashed
  • 1-2 green chilies, finely chopped (adjust to your spice preference)
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of (hing)
  • A few curry leaves, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 2 tablespoons chopped cilantro (coriander leaves)
  • Salt to taste
  • Oil for deep frying

For the Batter:

  • 1 cup gram flour (besan)
  • A pinch of baking soda
  • A pinch of turmeric powder
  • Salt to taste
  • Water, as needed

For Assembling:

  • 8 pav buns
  • Green chutney (cilantro-mint chutney)
  • Tamarind chutney
  • Sliced onions (optional)
  • Butter for toasting the pav

Instructions Of Vada Pav :

  1. Prepare the Potato Filling:
    • In a pan, heat some oil. Add mustard seeds and cumin seeds. Once they splutter, add asafoetida and curry leaves.
    • Add the ginger-garlic paste and chopped green chilies. Sauté for a minute.
    • Add the mashed potatoes, turmeric powder, red chili powder, and salt. Mix well.
    • Cook for a few minutes until the mixture comes together and the spices are well incorporated.
    • Add chopped cilantro, mix, and let the potato mixture cool.
  2. Make the Gram Flour Batter:
    • In a bowl, combine the gram flour, a pinch of baking soda, turmeric powder, and salt.
    • Gradually add water while stirring to form a smooth, thick batter without lumps. The batter should be thick enough to coat the back of a spoon.
  3. Shape and Fry the Vada:
    • Take a portion of the potato mixture and shape it into a round patty.
    • Heat oil in a deep frying pan over medium-high heat.
    • Dip each potato patty into the gram flour batter, ensuring it’s evenly coated.
    • Gently slide it into the hot oil and deep fry until golden brown and crisp. Repeat with the remaining patties.
    • Drain the fried vada on paper towels to remove excess oil.
  4. Assemble Vada Pav:
    • Slice the pav buns in half and lightly toast them with butter on a griddle or skillet.
    • Spread green chutney on one side of the bun and tamarind chutney on the other.
    • Place a vada in the center of the bun.
    • Optionally, add some sliced onions on top of the vada.
    • Close the bun, and your Vada Pav is ready to enjoy!

Serve your homemade Vada Pav hot with extra chutney on the side. It’s a delicious and satisfying street food snack.
