Pav Bhaji – a spicy curry of mixed vegetables (bhaji) cooked in a special blend of spices and served with soft buttered pav (bread bun shallow fried in butter), is any Indian food lover’s dream. The boiled and mashed veggies give it a smooth yet chunky texture while specially blended Pav Bhaji Masala gives it an irresistible, mouthwatering aroma and taste – serve it with a piece of buttery shallow fried bun and voila! – it’s a perfect party food that can be made in advance. It’s also the best way to make your kids eat some veggies as sometimes kids don’t like the taste of a particular veggie, but in pav bhaji they wouldn’t even notice any veggie and eat joyfully.

Ingredients Of Pav Bhaji :

For the Bhaji (Vegetable Curry):

  • 2 cups mixed vegetables (e.g., potatoes, peas, carrots, cauliflower, bell peppers), chopped
  • 2 large tomatoes, chopped
  • 1 large onion, finely chopped
  • 1/2 cup green bell pepper (capsicum), finely chopped
  • 2-3 cloves of garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 green chilies, finely chopped (adjust to your spice preference)
  • 2 tablespoons butter or oil
  • 2 tablespoons Pav Bhaji masala (readily available in stores)
  • 1 teaspoon red chili powder (adjust to your spice preference)
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2-3 tablespoons chopped cilantro (coriander leaves) for garnish
  • 1 lemon, cut into wedges

For the Pav (Bread Rolls):

  • 8 soft pav (dinner rolls) or buns
  • 2-3 tablespoons butter

Instructions Of Pav Bhaji :

For the Bhaji (Vegetable Curry):

  1. Boil the mixed vegetables until they are soft and mashable. Drain and set aside.
  2. In a large pan, heat the butter or oil over medium heat.
  3. Add the minced garlic, ginger, and green chilies. Sauté for a minute or two until they release their fragrance.
  4. Add the finely chopped onions and cook until they turn translucent.
  5. Add the green bell peppers and cook for a couple of minutes.
  6. Add the chopped tomatoes and cook until they soften and the oil starts to separate.
  7. Add the Pav Bhaji masala, red chili powder, turmeric powder, and salt. Mix well and cook for a couple of minutes.
  8. Mash the boiled vegetables and add them to the pan. Mix thoroughly.
  9. Add some water to achieve the desired consistency. Bhaji should be semi-thick, so adjust the water accordingly.
  10. Simmer the Bhaji for about 10-15 minutes, stirring occasionally. This allows the flavors to meld and the vegetables to absorb the spices.
  11. Taste and adjust the salt and spice levels if needed.

For the Pav (Bread Rolls):

  1. Slice the pav horizontally, leaving one edge intact, so you can open them like a book.
  2. Heat a griddle or tava over medium heat and add a little butter.
  3. Place the pav open side down on the griddle and toast until they turn light brown and crispy.


  1. Serve the hot Pav Bhaji with a dollop of butter on top.
  2. Garnish with chopped cilantro and serve with lemon wedges and additional buttered pav on the side.
  3. Enjoy your homemade Pav Bhaji with some finely chopped onions and pickles if desired.
