  • 2 celery stalks, diced
  • 1 bell pepper, diced (red or green)
  • 2 potatoes, peeled and diced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14 oz) diced tomatoes
  • 8 cups vegetable or chicken broth (homemade or store-bought)
  • 1 cup pasta (e.g., small shells, elbow macaroni)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)

Instructions Of Mix Veg Soup :

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic and sauté for a few minutes until they become translucent.
  3. Add the carrots, celery, bell pepper, potatoes, zucchini, and green beans to the pot. Cook for about 5 minutes, stirring occasionally.
  4. Pour in the can of diced tomatoes (with their juices) and the vegetable or chicken broth. Bring the mixture to a boil.
  5. Once the soup is boiling, reduce the heat to a simmer and add the dried thyme and oregano. Season with salt and pepper to taste.
