Ingredients Recipe Of Kadai Paneer :

For Kadai Masala (Spice Mix):

  • 2 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 2-3 dried red chilies (adjust to your spice preference)
  • 4-5 black peppercorns
  • 2-3 green cardamom pods
  • 1-inch piece of cinnamon stick
  • 4-5 cloves

For Kadai Paneer:

  • 250 grams paneer (cottage cheese), cubed
  • 1 cup bell peppers (capsicum), cut into strips
  • 2 medium-sized onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2-3 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons cooking oil
  • Fresh coriander leaves for garnish

Instructions Recipe Of Kadai Paneer :

  1. Dry roast the spices for the kadai masala: In a dry pan, add coriander seeds, cumin seeds, dried red chilies, black peppercorns, green cardamom pods, cinnamon stick, and cloves. Roast them on low heat until they become aromatic. Remove from heat and let them cool.
  2. Grind the roasted spices into a coarse powder using a mortar and pestle or a spice grinder. This is your kadai masala. Set it aside.
  3. In a large, heavy-bottomed pan or kadai, heat 2 tablespoons of oil over medium heat. Add the finely chopped onions and sauté until they turn translucent and golden brown.
  4. Stir in the ginger-garlic paste and green chilies. Sauté for a couple of minutes until the raw aroma disappears.
  5. Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the mixture.
  6. Add the turmeric powder, red chili powder, and the freshly ground kadai masala. Mix well and cook for a few minutes until the spices are well incorporated.
  7. Now, add the bell peppers (capsicum) and cook for about 5 minutes. You want them to remain slightly crunchy.
  8. Add the paneer cubes and garam masala. Gently mix everything to coat the paneer and bell peppers with the masala.
  9. Cook for another 2-3 minutes, allowing the paneer to absorb the flavors of the masala.
  10. Garnish with fresh coriander leaves.
