Ingredients Of Recipe Of Dosa :

For Dosa Batter:

  • 1 cup parboiled rice
  • 1 cup raw rice
  • 1/2 cup urad dal (split black gram)
  • 1/2 tsp fenugreek seeds
  • Salt to taste
  • Water for soaking

For Making Dosa:

  • Dosa batter
  • Oil or ghee for cooking dosas
  • Optional: finely chopped onions, green chilies, and curry leaves for Masala Dosa

Instructions Of Recipe Of Dosa :

For Dosa Batter:

  1. Wash the parboiled rice, raw rice, urad dal, and fenugreek seeds separately.
  2. Soak them in water for about 4-6 hours or overnight.
  3. After soaking, drain the water and grind them together in a wet grinder or a high-speed blender until you get a smooth and slightly thick batter. Add water as needed while grinding.
  4. Add salt to the batter and mix it well. The batter should be of pouring consistency, similar to pancake batter.
  5. Ferment the batter by covering the container and leaving it in a warm place for at least 8-12 hours, or until it has doubled in volume. The fermentation process is crucial for the dosa’s texture and taste.

For Making Dosa:

  1. Heat a non-stick or cast-iron skillet (dosa tava) over medium-high heat.
  2. Once hot, reduce the heat to medium. You can test the temperature by sprinkling a few drops of water on the skillet. They should sizzle and evaporate.
  3. Grease the skillet lightly with a little oil or ghee.
  4. Pour a ladleful of the dosa batter in the center of the skillet.
  5. Using the back of the ladle, spread the batter in a circular motion to make a thin crepe. You can make the dosa as thin or thick as you prefer.
  6. If you’re making a Masala Dosa, you can sprinkle some finely chopped onions, green chilies, and curry leaves on the dosa at this point.
  7. Drizzle a little oil or ghee around the edges of the dosa and cook until the bottom turns golden brown and crispy.
  8. Gently flip the dosa to cook the other side for a minute or so. You can fold it in half if you’ve added filling for a Masala Dosa.
  9. Remove the dosa from the skillet and serve it hot with chutney and sambar.

Continue making dosas with the remaining batter, greasing the skillet as needed. Serve dosas with coconut chutney, tomato chutney, or sambar for a delicious South Indian meal.
