For Cooking Lentils:

  • 1 cup whole black lentils (urad dal)
  • 1/4 cup kidney beans (rajma)
  • 4 cups water for soaking
  • 4 cups water for cooking
  • 1/2 teaspoon salt

For Gravy:

  • 2 tablespoons ghee (clarified butter) or oil
  • 1 large onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2-3 green chilies, slit
  • 2 cups tomato puree (made from ripe tomatoes)
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 cup cream (heavy cream)
  • Salt to taste
  • Fresh coriander leaves for garnish

For Tempering (Tadka):

  • 2 tablespoons ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 2-3 cloves garlic, finely chopped
  • 1 dried red chili (optional)

Instructions Of  Recipe Of Dal Makhani :

  1. Soak the black lentils and kidney beans in 4 cups of water for at least 6-8 hours or overnight.
  2. After soaking, drain the water and rinse the lentils and beans thoroughly. Then, add them to a pressure cooker or a large pot with 4 cups of fresh water and 1/2 teaspoon of salt. Pressure cook for about 4-5 whistles or until they are soft and well-cooked. If using a pot, it may take longer, approximately 45 minutes to 1 hour.
  3. For the gravy, heat 2 tablespoons of ghee or oil in a large pan. Add the chopped onions and sauté until they turn translucent and golden brown.
  4. Add ginger-garlic paste and green chilies, and sauté for a few more minutes until the raw smell disappears.
  5. Add the tomato puree and cook until the oil starts to separate from the mixture and it thickens.
  6. Add the red chili powder, cumin powder, coriander powder, turmeric powder, and garam masala. Stir well and cook for a few minutes.
  7. Pour the cooked lentils and beans into the tomato gravy. Mix well and simmer for about 20-30 minutes, stirring occasionally. If the mixture gets too thick, you can add some water to achieve the desired consistency.
  8. Add cream and salt to taste. Stir and cook for an additional 5-10 minutes.
  9. In a separate small pan, heat 2 tablespoons of ghee for tempering. Add cumin seeds, chopped garlic, and dried red chili (if using). Cook until the garlic turns golden brown, and then pour this tempering over the dal makhani. Recipe Of Dal Makhani
